Chocolate is our most decadent pleasure and now we’ve found a way to enjoy it to the max—sans guilt. Yeah, we know. You think we’re kidding. It’s true. We scoured cookbooks the globe over and AHA! Here it is: a healthy dessert recipe from the “uncookbook” LOVE ON A PLATE, otherwise known as the ultimate guide to preparing gourmet raw food meals.

In case you missed the gist of that, it means No.Cooking.Required. And no squats either. You can, however, count on lots of exercise while running back and forth to the freezer. To make enjoying even more heavenly, this is one recipe you can whip up in no time at all. Short and sweet. YUM.

DELICIOUS FREEZER CHOCOLATE WITH MARZIPAN FILLING 

This chocolate hardens within 30 minutes of being in the freezer so you won’t have to wait long to try it. Even better, it can be kept frozen indefinitely so expect to be enjoying it for a good long time (unless you’re a true addict, that is, like us). But remember: when you take out a piece, eat it right away because because coconut oil melts at room temperature and you don’t want to miss out. PS. Pure raw coconut oil is really good for you. Like really good.

STEP 1: CHOCOLATE

WHAT YOU NEED

  • 1 cup cacao powder (sifted to remove lumps)
  • 1/4 cup carob powder (sifted to remove lumps)
  • 1/4 cup cashew butter
  • 1/4 cup maple syrup
  • 1/2 cup coconut oil (warmed to clear liquid at room temp)
  • 1 teaspoon vanilla

WHAT YOU DO

Mix in bowl, pour in mould or dip in chunks of fruit and put in freezer. Ready in one hour.   

STEP 2: MARZIPAN

WHAT YOU NEED

  • 1 1/2 cups almond meal
  • 1/4 cup maple syrup

WHAT YOU DO

Grind almonds into a fine power in a coffee grinder to make the almond meal. Then mix with the maple syrup and knead into dough.  You can eat immediately or use it as a filling for the chocolate that has hardened.  Stores in refrigerator for long time. For a whiter-looking marzipan, use skinned or blanched almonds.
